Thaise kippensoep

Dit is een erg lekker soepje. Apart door de kokos en fris door het citroensap. De combinatie van smaken levert een aparte smaakcombinatie op. Het oorspronkelijke recept vraagt om kokosroom in de vorm van een blok. Ik had nog kokosmelk over, dus heb ik dat gebruikt.

Het recept komt uit "Asian cooking" en heet "Thai chicken soup".

Ingredienten
1 el olie
1 teen knoflook, fijngehakt
1kipfilet
¼ tl kurkuma
1/8 tl chilliepoeder
100 ml kokosmelk
1 liter kippebouillon
2 el citroensap
2 el pindakaas (liefst met stukjes pinda)
100 g eiermie
1 el verse koriander
3 el geraspte kokos
zout en peper

Bereiding
Snijd de kip in blokjes en hak de knoflook fijn.
Verhit olie in een grote pad, bak de knoflook zachtjes (niet laten verbranden!)
Voeg kip, kurkuma en chilliepoeder toe, bak 3-4 minuten.
Voeg de kippebouillon toe, met de kokosmelk. Voeg citroensap, pindakaas en eiermie toe.Dek af en laat 15 minuten zachtjes koken. Breng op smaak met zout en peper. Voeg koriander toe en laat nog 5 minuten koken.
In de tussentijd doe je de geraspte kokos in een droge koekepan en laat, onder voortdurend roeren, op hoog vuur lichtbruin worden.
Schep de soep in een diep bord en besprenkel met de kokos.

Thai Chicken Soup

This is a nice chicken soup. The combination of ingredients taste well together. The coconut really adds to the flavour.

Ingredients
1 tbsp vegetable oil
1 clove garlic
1 chicken breast, without skin
¼ tsp turmeric
1/8 tsp chilli powder
100 ml kokosmilk
1 liter chickenstock
2 tbsp lemonjuice
2 tbsp crunchy peanutbutter
100 g eggnoodles
1 tbsp fresh coriander
3 tbsp desiccated coconut
salt and freshly ground black pepper

Method
Cut the chicken in 2 cm pieces. Chop the garlic finely.
Heat the oil and fry the garlic softly (do not let it burn!)
Add the chicken, turmeric and chilli powder and fry for 4 minutes.
Add the chickenstock and coconutmilk and stir until dissolved.
Add the lemon juice, peanut butter and noodles.
Cover and simmer for 15 minutes. Add the coriander and simmer for a further 5 minutes.
Meanwhile dry-fry the coconut in a small frying pan. Stir constantly until lightly browned.
Serve in a soup bowl sprinkled with fried coconut.
