Butternut Squash soep

Albert Heijn verkoopt pakketten met alle ingrediënten om een soep mee te maken. Ze hebben verschillende keuzes, en ik koos voor de pompoensoep. Het was een lekker frisse soep.

Ingrediënten
• 1 pompoen (butternut squash), niet al te groot
• 2 winter wortels
• 3 sjalotjes
• 3 tenen knoflook
• 1 stukje gember van 2 tot 3 cm
• 1 appel
• 1 sinaasappel
• 1 tl ras el hanout
• snufje cayennepeper

Voorbereiding
Snijd de sjalotjes, knoflook en gember fijn.
Schil de butternut squash en snijd het vrucht vlees in blokjes.
Schil de wortels en snijd ze in blokjes.
Schil de appel en snijd hem in blokjes.
Pers de sinaasappel uit.

Bereiding
Verhit 2el olijfolie in een soeppan.
Fruit de sjalot, knoflook en gember ca 3 minuten. Voeg na 2 minuten de ras el hanout toe en fruit even mee.
Doe de butternut squash en de wortel in de pan. Bak op middel hoog vuur ongeveer 5 minuten. Roer af en toe om.
Voeg 1 liter water, sinaasappelsap, 2 verkruimelde groentebouillonblokjes en appel toe. Breng aan de kook en laat 20 minuten zachtjes koken met de deksel op de pan.
Pureer met een staafmixer. Proef en breng op smaak met cayennepeper.

Soep met eend en kweepeer



Een paar jaar geleden heb ik de kweepeer ontdekt. Ik vind de vrucht heel lekker. In Nederland is het een beetje een vergeten groente. Daardoor zijn ze moeilijk verkrijgbaar. Althans, bij de supermarkt hoef je ze niet te verwachten. Bij een goed gesorteerde groentenboer, een natuurvoedingswinkel liggen ze af en toe. De grootste kans heb je bij een Turkse winkel. Ze hebben een hele lekkere zoetzure smaak, ik vind ze heerlijk.

Dit is een lekker soepje. Het zoetzure van de kweepeer en citroensap breekt mooi door het vettige van de eend.

Duck ash with quince

A few years ago I discovered the quince. I really like this fruit, because of their sweet-and-sour taste. In the Netherlands it's not easily available. I bought it in a Turkish foodstore. Sometimes grocery stores or organic food stores have them.

This is a nice soup. The sweet-and-sour of the quince and sour of the lemon juice break through the fat of the duck nicely.

Ik had weer eens zin in iets aziatisch en een soep. En toen zag ik dit recept op de blog van Cooking Tackle. Ik heb het iets aangepast, maar niet veel. En ik vond het heel lekker. Ik heb wat rijst toegevoegd om er een meer gevulde soep van te maken.

Dal met rabarber



Dit is een recept dat ik tegenkwam op internet. Omdat ik een enigszins zure smaak in het eten wel lekker vind, en ik ook erg van dal hou, vond ik het de moeite waard om het eens te proberen. En het was inderdaad heel erg lekker. Dat zure past er goed in, maar je kunt het ook heel goed weglaten. Het wordt een dikke brij, het ziet er niet uit, de kleur is lichtbruin. Maar de smaak is subliem. Bestrooid met koriander ziet het er nog een beetje kleurig uit. En dan te bedenken dat ik vroeger niet van linzen hield. Zo zie je maar weer: je smaak kan veranderen. Probeer af en toe eens iets waarvan je denkt dat je het niet lekker vindt. Ik doe dat af en toe, en soms word ik aangenaam verrast. En soms niet, dan weet je dat je het nog steeds niet lekker vind. Zorg dat je iets achter de hand hebt om te eten, wel zo handig.

Rabarber heeft, net als bleekselderij, van die draden in de lengte van de steel lopen. Zet je mes aan een kant schuin op de rand van de stengel, en trek naar beneden. Zo trek je de draden ervan af.

Dal with rhubarb

I found this recipe on the internet. Because I like a little bit of sour flavour in my food, and also because I love dal, I decided to give it a go. And it was indeed very good. The sour flavour went very well with the other ingredients, but if you don’t like it, leave the rhubarb out. Its a gloopy mess on your plate, the colour is brownish, so it doesn’t look very good, but the flavour is superb. The cilantro leaves sprinkled on top give it a little bit of colour. I didn’t follow the recipe exactly. I fried the shalots and spices, and added them to the end, like tempering as the Indians do. I ground the spice instead of putting them in whole.

And imagine I used to dislike lentils! So you see: your taste changes. Sometimes I try to eat something I think I don’t like. Sometimes I am pleasantly surprised. And sometimes I’m not. So if you do this, take care to have something else to eat, just in case.

Rhubarb has strings along the stems, just like green celery stalks. You can easily remove them by setting your knife at one end on the edge of the stem and pull it down.

Turkse linzensoep



Als ik linzensoep maak, is het meestal Indiase linzensoep. Toen ik dit recept zag, wist ik dat ik het moest maken. Heel anders dan de Indiase, maar niet minder lekker! Ik vond het een zeer geslaagde soep.

De sumac en rode paprikapasta koop je bij Turkse winkels. Er zijn twee soorten paprikapasta: de milde (tatli biber) en de hete (aci biber). Voor dit recept heb ik de milde gebruikt. Jeekunt het eventueel vervangen door tomatenpuree. Het pittige kwam van de cayennepeper. De sumac voegt zuur toe. Kun je het niet vinden, gebruik dan citroensap. Gebruik hier minder van dan van de sumac, want citroensap is zuurder. Proef!

Turkish lentilsoup

When I make lentil soup, I usually make the one from India. When I saw thís recipe, I knew I had to make it. It’s very different from the Indian kind, but just as good! I liked it very much.
I bought the sumac and red pepper paste at a Turkish grocery store. The red pepper paste come in two flavours: hot and mild. I used the mild one. You could substitute tomato purée. The heat came from cayenne pepper. If you like it hot, add more. The sumac adds a sour flavour. If you can’t find it, use lemon juice. Because lemon juice is more sour, use less of it.

Thaise linzensoep



Ik wist niet wat ik zou maken dit weekend. Ik had gelogeerd bij mijn zusje in Den Haag, en was helemaal vergeten dat, wanneer ik zondag thuis zou komen, dat er dan ook eten op tafel moest komen. Ik zat wat in het wilde weg te fantaseren, en kwam hier op. Het was erg lekker. Eigenlijk een mix tussen een dal en een Thaise curry. Het paste goed bij elkaar. Een volgende keer zou ik er iets meer groenten doorheen doen. Maar nu moest ik het doen met wat er in huis was.

Thai lentilsoup

I didn't know what to make for dinner this weekend. I had stayed with my sister in The Hague, and completely forgot I had to eat something when I came home. I looked in my fridge and closet and came up with this. It's something in between a Thai curry and a dal. I liked the combination. Next time I'll add more vegetables, but I had to make do with what I had on hand.

Linzensoep uit de bergen



Kennen jullie het verhaal van Jacob en Esau uit de bijbel? Esau was op jacht geweest en had honger. Jacob bood hem een bord linzensoep aan in ruil voor zijn eerstgeboorterecht. Een verhaal dat aangeeft hoe iemand iets héél belangrijks verkoopt voor iets bijna waardeloos.

Maar probeer het je eens voor te stellen. Je bent de hele dag op jacht geweest, je bent heel erg moe, en je hebt hartstikke honger. En dan houdt iemand dít gerecht gerecht voor je neus. Maak dit gerecht, proef het, en je ziet het verhaal van Jacob en Esau in een heel ander licht.

We kunnen natuurlijk wel stellen dat Esau niet déze linzensoep kreeg, want dit is een soep uit Nepal. Laat je niet weerhouden door het saaie uiterlijk van de foto. Ik vind het een van de lekkerste vegetarische gerechten die er zijn. Ik vond het tamelijk heet, maar niet té. Als je van echt heet houdt, verhoog dan het aantal chilipepers. Zo niet, gebruik minder.



Doe 1 kop rode linzen (masur dal) of mung dal in een kookpan, met 1¼ liter water. Doe er ½ tl kurkuma en 1 tl zout bij. Breng aan de kook, dek af, verlaag het vuur, en kook de linzen tot ze gaar zijn. (Masur dal = 25 minuten, mung dal = 40 minuten)

Doe de volgende ingrediënten in een specerijenmolen of vijzel: 3 gedroogde chilipepers, 1 tl korianderzaadjes, ½ tl komijnzaadjes, kaneelstokje van 2½ cm, 3 kruidnagels, de zaadjes van 2 groene cardemompeulen, 6 peperkorrels. Maal ze tot een fijn poeder.

Snijd 1 ui fijn. Verhit 1 el mosterdolie of andere plantaardige olie, en bak de ui 5 minuten tot ze zacht is. Voeg het specerijenmengsel toe en bak 2 minuten mee. Doe dit mengsel bij de linzen en laat nog 5 minuten zachtjes doorkoken, tot de smaken zich gemengd hebben. Serveer.

Ik heb er brood met een yoghurtspread bij gegeven. Roer 3 grote eetlepels yoghurt, 1½ el mango chutney, ¼ tl kurkuma, ½ tl garam masala, gemalen zwarte peper, bosje gehakte korianderblaadjes, 1 el citroensap door elkaar. Proef of de smaakbalans in orde is, en pas eventueel aan. Ik vond het goed bij de linzensoep passen. De soep is best pittig en dit mengsel is verkoelend.

Mountain dal

Do you know the story of Jacob and E'sau from the bible? E'sau had been hunting and was hungry. Jacob offered him lentilsoup in exchange for his birthright. This is a story about exchanging something very important for something nearly worthless.

But imagine yourself in his place. You have been hunting all day. You are finally home, dead tired, and very hungry. And then someone offers you this dish. Try for yourself. Make this recipe, taste it, and reconsider his decision. I've been seeing it in a whole different light, now.

Of course E'sau didn't get thís particular dish, because it is from Nepal. Don't let the boring sight of the picture hold you back. I think it's one of the best vegetarian dishes out there. I thought is was rather spicy, but not too much so. If you like it hot, up the amount of chillies. If not, use less than called for.



Put 1 cup red lentils (masur dal) in a large cooking pot. You could also use split mung dal. Add 5 cups water, ½ tsp turmeric and 1 tsp salt. Bring to the boil, cover, lower the heat and simmer until the lentils are soft. (25 minutes for Masur dal, 40 minutes for mung dal.)

Place the following ingredients in a spice grinder or pestle and mortar: 3 dried chilipeppers, 1 tsp coriander seeds, ½ tsp cumin seeds, 1-inch cinnamon stick, 3 cloves, seeds from 2 green cardamom pods, 6 peppercorns. Grind into a fine powder.

Chop 1 onion finely. Heat 1 tbsp mustard oil or other vegetable oil and fry the onion for 5 minutes, until soft. Add the spice mix, stir, and fry for 2 minutes. Add to the lentils. Stir to combine and simmer for 5 minutes longer to allow the flavours to blend. Serve.

I served it with bread and a yoghurt-mixture. Mix 3 large spoonfuls of yoghurt, 1½ tbsp mango chutney (I used Patak's), ¼ tsp turmeric, ½ tsp garam masala, freshly ground black pepper, pinch of salt, 1 bunch of chopped coriander leaves, 1 tbsp lemon juice. Taste for flavour balance and adjust if necessary. I thought it went well with this spicy soup, for it was nice and cooling.

Witlofsoep



Een lekker soepje, als je van witlof houdt. Het smaakt echt naar witlof, ook al zitten er veel meer groenten in. De spekjes wisselen de smaak wat af, en als je nog wat knapperig witlof toevoegt, heeft de textuur ook nog wat afwisseling.

Ik had de boodschappen gehaald voor deze soep en ik wist zeker dat ik bieslook had gekocht. Maar toen ik het zocht, om de soep mee te garneren, kon ik het nergens vinden. Hè, wat vervelend. Heb ik het laten liggen in de winkel? Ik weet het niet meer. Of heb ik het ergens opgeborgen waar ik het niet kan vinden? Ik onderzoek alle plekken waar ik het mogelijk opgeborgen kan hebben twee keer, maar ik kan het niet vinden. Nou ja, dan maar zonder. Gelukkig is het alleen de garnering, en geen essentieel ingrediënt.



Snijd 2 worteltjes in dunne plakjes. Snijd 2 stengels bleekselderij in blokjes. Snipper 1 ui. Snijd 1 prei in halve ringetjes. Snijd 2 grote struiken witlof in grove stukken, en een derde in reepjes.

Verhit 1 el boter. Doe alle groenten erbij en roerbak tot de groenten wat zachter worden, ca. 10 minuten. Schenk 1,5 liter kippebouillon erbij. Laat 30 minuten zachtjes koken.

In de tussentijd bak je 100 g gerookte spekblokjes knapperig. Voeg de reepjes witlof toe en bak even mee.

Pureer de soep met een staafmixer. Roer 100 ml room erdoor. Breng op smaak met zout en peper.
Schep in borden en verdeel het spek/witlof mengsel erover. Garneer eventueel met bieslook.

Dit gerecht kan eventueel vegetarisch gemaakt worden: gebruik water of groentebouillon ipv kippebouillon. Laat de spekjes achterwege.

Chicory soup

If you like chicory, you will like this soup. It really has a chicory taste, although there are much more vegetables in this soup. The bacon goes really well with it, and some fresh chicory give a nice crunch.

According to the recipe, the soup should be garnished with chives. But I couldn't find them when I wanted to use them. I don't like that. Did I leave them at the store? I don't remember. Did I put them somewhere? I don't remember. I searched all the places where I could have put them twice. They aren't there. Well, it's a pity, but I'll have to do without. Fortunately it's just garnish and not an essential ingredient.

Slice 2 little carrots in thinly. Chop 2 stalks of celery coarsely. Slice 1 leek in thin rounds. Chop 2 heads chicory coarsely, and 1 julienne (like match sticks). Chop 1 onion finely.

Heat 1 tbsp butter in a large pot. Add the vegetables and stir-fry until softer, approx. 10 minutes. Add 1,5 liter chicken stock, bring to the boil, simmer for 30 minutes.

In the meantime, fry 125 g bacon (in small pieces), until crips. Add the chicory julienne, and fry for 1 minute.

Purée the soup with a hand blender. Stir in 100 ml double cream, and season with salt and pepper.
Pour into deep plates and garnish with the bacon and chicory julienne.

To make it vegetarian: use water or vegetable stock instead of chicken stock. Leave out the bacon. You could cut sundried tomatoes in little pieces and use those instead of bacon.

Kastanjesoep met chorizo



Het is kastanjetijd! Mijn ervaringen met kastanjes stammen uit mijn jeugd. Op de lagere school maakten we elk jaar een herfstwandeling in het bos, waarbij beukennootjes en kastanjes werden gezocht en gegeten. In die tijd werd mij bijgebracht wat het verschil is tussen wilde en tamme kastanjes: tamme hebben een puntje en zijn eetbaar. De wilde kun je niet eten.

Bij een Turkse winkel zag ik ze ineens liggen: een grote bak met tamme kastanjes. Ik kocht een zak, ongeveer een halve kilo, nog niet wetend wat ermee te doen. Totdat ik mij herinnerde dat ik in een boek van Sam & Sam Clark, Moro, iets met kastanjes had gezien. Ik zocht het op, en ja, er staat een recept voor soep in. Er gaat ook chorizo in, dus het moet bijna wel lekker zijn. Ik besloot dat te gaan maken.

Nu een moeilijkheid: hoe maak je ze klaar? Internet biedt uitkomst. Ik zag een filmpje op Youtube, waarin de kastanjes doorgesneden moesten worden, dan een paar minuten gekookt, en zodra ze genoeg afgekoeld zijn om ze met je handen te kunnen pakken, maar nog wel warm, kun je de schil gemakkelijk verwijderen. Ik probeerde het uit, en dat werkte. Door ze door te snijden, kun je meteen zien of ze nog goed zijn van binnen. Ik had er eentje die bedorven was, en linea recta de vuilnisbak in ging. Ook beschimmelde exemplaren moet je weggooien, maar die had ik gelukkig niet. (Volgens andere methoden moesten je de platte kant insnijden met een scherp mesje. Dit leek me moeilijker en tijdrovender dan doorsnijden. Bovendien kun je niet zien of ze bedorven zijn. Deze methode viel voor mij af.)

Nog een andere moeilijkheid: het vliesje. Er ziet een bruin, enigszins harig vliesje om de kastanjes, en die lieten niet gemakkelijk los. Het vlies is wel eetbaar, maar heeft een licht bittere smaak. Nu denk ik dat dat wel wat toe kan voegen aan een gerecht, dus ik besloot ze met vlies en al te gebruiken.

Ik vond het een erg lekkere soep. De kastanjes hebben niet een uitgesproken smaak, maar zijn een beetje zoet geworden. Samen met de overige ingrediënten heeft de soep een heerlijk volle smaak. Jammer dat het pellen van de kastanjes zo veel werk is (en ook niet bepaald een leuk karweitje). Ik had verwacht dat de chorizo de soep zou overheersen, maar dat was ook niet zo. Een geslaagd gerecht.



Pel 500 g kastanjes. Hierboven staat een methode die je kunt gebruiken, maar er zijn ook andere methodes te vinden op internet. Kook ze tot ze zacht zijn, tussen de 10 minuten en 20 minuten (afhankelijk van de methode die ke gekozen hebt om ze te pellen).
Snijd 1 wortel, 1 stengel bleekselderij, ui in heel kleine blokjes.
Snijd 2 tenen knoflook in heel dunne plakjes.
Snijd 1 Spaanse peper in kleine stukjes.
Snijd 125 g chorizo in blokjes van 1 cm.
Verhit olie in de pan waarin je de soep gaat maken. Voeg wortel, bleekselderij en ui toe, en bak 10 minuten.
Voeg chorizo en knoflook toe, en bak een minuutje mee.
Voeg ½ blik tomatenstukjes toe (200 g).
Doe na 1 minuut 1 zakje safraanpoeder, 1 tl komijnpoeder, 1 tl gedroogde tijm erbij. (Origineel moet er safraanwater en verse tijm in, maar dat had ik niet.) Roer goed.
Haal de kastanjes met een schuimspaan uit het kookwater en voeg toe aan de soep. Doe er dan 1 liter water bij. Laat nog 10 minuten koken. Stamp met een aardappelstamper tot de kastanjes fijner zijn, maar de soep nog wel een grove structuur heeft.
Breng op smaak met zout en peper.

Nu komen de vliesjes als vanzelf boven drijven. De grootste heb ik eruit gehaald, maar het was geen doen alles te verwijderen. Als je niet van die vliesjes houdt, zou ik toch proberen ze van tevoren te verwijderen. Ik vond het bij het eten echter niet storend, en de smaak was ook niet bitter.

Chestnut soup with chorizo

It's chestnut time! My earliest memories with chestnuts are from my youth. At primary school we used to make an "autumn walk" in the forest. The teachers told us about things to be seen and found in the woods. Among them were chestnuts and beechnuts.

I was visiting a Turkish store, and there I saw them. I bought a pound of them, not knowing what to do with them. Until I remembered a recipe from Sam & Sam Clark, from their book Moro. I looked it up, it was a chestnut soup. I decided to try that one.

But then: how to prepare them? I searched on the internet. There are many ways: roasting, steaming, boiling. Scoring with a sharp knife or slicing them. I decided to slice them in two parts. It sounded easier then scoring, and this way you can see if they are still all right. I had to throw away one, for it was black inside. Also mouldy ones should be thrown away, but I didn't encounter them. So I cut them in two, boiled them a couple of minutes, then peeled them by hand. The peel came of easily.

But then the membrane. They have a brown, hairy membrane. It is edible, but has a slightly bitter taste. As I couldn't remove it easily, I decided to use the chestnuts with membrane and all. I do not mind a little bitter taste, it could even contribute to the taste of the complete dish.

The soup was very good. The chestnuts do not have a particular, recognizable taste. They are a little sweet. Combined with the other ingredients it had a lovely hearty taste. First I had doubts about the chorizo as it can overpower a dish easily. But it didn't. It was a nice dish!

Peel 500 g chestnuts (1 pound). Use the method described above, or another method to like your liking. Boil them until they are soft, about 10-20 minutes (depending on the method you used for peeling them).
Chop 1 carrot, 1 celery stalk, 1 onion, 1 red chili finely.
Slice 2 cloves of garlic thinly.
Dice 125 g chorizo in 1 cm cubes.
Heat 2 tbsp oil in the pot in which you want to make the soup. Add carrot, celery and onion, fry for 10 minutes.
Add chorizo and garlic, fry for 1 minute.
Add ½ can tomatoes, chopped. (About 200 grams.) Stir.
Add 1 sachet saffran powder, 1 tsp cumin, 1 tsp dried thyme. The original recipe tells you to add saffran water and fresh thyme, but I didn't have that on hand. Stir to combine.
Remove the chestnuts from their boiling liquid and transfer to the pot. Add 1 liter water. Boil for 10 minutes. Use a potato masher to mash the soup to a coarse consistency. Season with salt and pepper.

I found that the membranes of the chestnuts came loose during the mashing, but it was too tedious a job to remove them all. I wasn't bothered by them and they didn't give the soup a bitter taste.

Eendebouillon met wontons



Ik heb je verteld van de Fesenjan die mijn vader en ik laatst gemaakt hebben. Van het eendekarkas hebben we bouillon getrokken. Aan het water hebben we verder helemaal niets toegevoegd. Het is dus pure eendebouillon, waar je nog helemaal je eigen draai aan kan geven.

Ik zocht al een tijdje naar een recept om iets met die eendebouillon te doen. Maar alle recepten die je vindt, ook met eend, gaan toch uit van kippebouillon. Totdat ik in een boek van Johann Lafer zat te bladeren, een Duitse kok. Hé, daar staat een recept met eendebouillon! Hij gaat ervan uit dat je een eendeborst laat trekken, maar omdat ik de bouillon al had, heb ik dat niet gedaan, maar gerookte eendeborst gebruikt en op het laatst toegevoegd.

De soep was erg lekker. Een aparte smaak. Een smaak die ik associeer met Chinees. Dat is niet verwonderlijk, met de steranijs en sechuan peper. De wontons waren lekker, hoewel de smaak wat sterker had mogen zijn. Het zoetzure van de rode kool steekt goed af tegen het vettige van de eendebouillon.



Schil een stuk gember van 3 cm en snijd in dunne plakjes. Snijd 1 teen knoflook in plakjes. Kneus 1 stengel citroengras.
Zet 1 liter eendebouillon op en voeg toe gember, knoflook, citroengras, 2 steranijs en 1 tl sechuan-peper. Leng aan met ½ liter water, of gebruik 1½ liter bouillon.

Terwijl dat staat te trekken, maak je de wontons. Ik heb 4 wontons per persoon gebruikt.
Snijd ¼ rode kool en 1 ui fijn. Verhit wat boter en bak de rode kool en ui tot ze wat zachter worden, een paar minuten. Voeg 1 el suiker toe en laat 5 minuten karamelliseren. Blus af met 2 el rode wijnazijn en laat nog 5 minuten stoven.
Leg 16 ronde wontonvelletjes voor je neer. Leg op elk een ruime theelepel van het rode kool mengsel. Bestrijk de randen met behulp van een kwastje met water. Vouw ze dicht zodat het halve maantjes worden. Probeer zo veel mogelijk lucht eruit te krijgen en druk de randen goed aan, zodat er geen openingen kunnen ontstaan.

Laat de wontons in de bouillon zakken, en laat ze 4 minuten koken. Breng op smaak met zout. Dien op met 4 wontons in elk bord, en plakjes gerookte eendeborst.

Duck stock with wontons

I have told you about the Fesenjan my father and I made the other day. From the duck carcass we made stock. Clean stock, with nothing else added. I have been looking for a recipe to use the duck stock, but it seems every recipe with duck still uses chicken stock. At last I found one. I was leafing through a book by Johann Lafer, a German cook, and finally, there I saw this recipe. I decided to give it a go.

It was a good choice. The stock has a particular taste I associate with Chinese. The wonton were nice, the sweet and sour taste of the red cabbage went well with the fattiness of the duck stock. Very good.

Peel a piece of ginger of 1 inch length and slice thinly. Slice 1 clove of garlic. Peel the outer leaves from 1 stalk of lemongrass. Slice lengthwise and crush with the back of a large knive.
Put 1 liter duck stock on the heat and bring to the boil. Add ginger, garlic, lemongrass, 2 star anise and 1 tsp sechuan pepper. Add ½ a liter water, or use 1½ liter stock to begin with. Lower the heat and simmer for 20 minutes.

In the meantime, make the wontons. For the filling, chop ¼ head of red cabbage and 1 onion finely. Heat some butter and fry until softer, a few minutes. Add 1 tbsp sugar, stir and caramelize for 5 minutes. Add 2 tbsp red wine vinegar, and fry for 5 minutes.
I made 4 wontons a person. Lay out 16 wonton skins in front of you. Add 1 teaspoon of the red cabbage mixture in the middle of each. Wet the edges with water using a brush. Fold each in a half moon shape. Press the edges closely together, you don't want the filling to be able to get out. Press out as many air as you possibly can.

Lower the wontons into the stock, and simmer for 4 minutes. By that time they should be ready and floating on the surface. Season to taste with salt. Transfer 4 wontons to each plate, add slices of smoked duck and ladle the stock on top. Serve.

Soep met boerenkool en chorizo



In Nederland ken ik eigenlijk maar één gerecht met boerenkool en dat is stamppot boerenkool. Liefst met rookworst en piccalilly. Nederlanders zijn fervente boerenkool eters, maar alleen dat stamppotgerecht.

Hier is een variant erop. Het bevat ook aardappel, boerenkool en worst, maar het is wel héél anders! Het is een soep, en er gaat ook nog tomaat in. De worst is chorizo. Mijn man gaf aan liever een iets meer gebonden soep te willen hebben. Misschien zal ik een volgende keer de soep wat binden, bijv. door wat bloem toe te voegen tijdens het bakken van de uien in het begin.



Snijd 1 ui fijn. Verhit olie in een grote pan en bak de ui zachtjes. Knijp 4 tenen knoflook uit boven de pan en bak even mee, tot de ui glazig is. Snijd ondertussen 125 g chorizo in plakjes en 2 grote aardappelen (vastkokend) in blokjes. Voeg de chorizo toe aan de pan en bak even mee, ca. 3 minuten. Doe de aardappel erbij en bak 5 minuten mee. Voeg 1 blik tomatenblokjes toe en 1 liter water. Breng aan de kook. Wanneer het kookt, voeg je nog 100 g boerenkool toe. Laat 20-30 minuten zachtjes koken, tot de boerenkool gaar is. Breng op smaak met zout en peper en garneer eventueel met blaadjes platte peterselie. Ik heb het geserveerd met brood en kruidenboter.

Peter geeft een tip om het vegetarisch te maken. Laat de worst achterwege, en voeg 1 tl pimentón toe. Doe dat in het begin bij het bakken van de ui en knoflook.


Soup with curly kale and chorizo

Dutch people love curly kale. They eat vast amounts of it. They only make one recipe with it though, which they call 'stamppot'. I don't know a translation for this word in english. 'Stamppot' is made by cooking potatoes and curly kale together, and then pound them, so the curly kale is incorporated into the potato. The Dutch eat it with picalilly and smoked sausages. Sometimes they add a little vinegar, sometimes gravy.

This blogpost isn't about that dish, however. If you're interested, google 'stamppot boerenkool'. This post is about a recipe with more or less the same ingredients, but completely different. It's a soup. There are potatoes, curly kale and sausage. The sausage is chorizo, and this dish also contains tomatoes. My husband said he would like a thicker soup, so next time I'll try to bind the soup by adding a some flour to the onions (1 tbsp or so), in the first step.

Chop 1 onion finely. Heat oil in a large pot and fry the onion on low heat. Press 4 cloves of garlic, add to the pot. Fry until the onion is soft. In the meantime, slice 125 g chorizo, and cube 2 large potatoes. Add the chorizo to the pot, increase the heat, and fry for 3 minutes. Add the potato and fry for 5 minutes. Add 1 can chopped tomatoes (400 g), and 1 liter water (a little over 2 pints). Bring to the boil. Then add 100 g curly kale (chopped) and cook for 20-30 minutes, or until the curly kale is soft.
Season to taste with salt and pepper. I served it with bread and herb butter.
