Ossenstaart in sherry



Dit is weer een gerecht dat ik samen met mijn vader gemaakt heb. Het is heel lekker, apart van smaak. Er gaat een hele fles sherry in, maar door het lange stoven, is de smaak van de saus heel zacht.

Dit recept is genoeg voor 6 mensen.



Verhit olijfolie in een grote braadpan, en bak 2 kilo ossenstaart rondom bruin. Doe het desnoods in twee porties, indien de pan te vol wordt. Haal uit de pan en strooi er zeezout over.

Hak 2 uien fijn. Snijd 1 winterwortel (of 4 bosworteltjes) in kleine blokjes. Hak 3 tenen knoflook fijn. Ontvel 6 tomaten, haal er de zaadjes uit, en snijd het vruchtvlees in blokjes.

Doe de ui, wortel, knoflook en 4 laurierblaadjes in de pan, en bak 15 minuten op laag vuur tot de groenten zacht zijn. Voeg de tomaat toe, en bak 5 minuten tot de tomaat iets zachter wordt. Roer 750 ml fino sherry door de groenten, schraap met een spatel over de bodem om de aanbaksels los te maken. Doe de ossenstaart erbij, 1 tl zwarte peperkorrels en 4 kruidnagels. Giet er zoveel water bij dat de ossenstaart onder staat. Laat in 3-4 uur gaar stoven.

Haal de ossenstaart uit de pan. Zet het vuur hoger, zodat de saus inkookt. Haal het vlees los van het bod en gooi het bot weg.
Doe het vlees weer terug in de pan, en laat doorkoken tot de saus de gewenste dikte heeft. Bestrooi met peterselie. Ik heb het geserveerd met spaghetti, en een keer met gebakken aardappels en pastinaak.

Oxtail in sherry

A recipe I made with my father. The dish has a peculiar, but delicious taste. Lovely! The recipe asks for a whole bottle of fino sherry. But don't worry, the sauce has a mellow taste because of the long stewing.

Heat olive oil in a large Dutch oven, and fry 2 kg oxtail until brown all over. You could do this in two stages, to avoid overcrowding the pot. Remove from the pot, set aside, and sprinkle with seesalt.

Chop 2 onions finely. Dice 1 large carrot (0r 4 smaller ones). Chop 3 cloves of garlic finely. Peel 6 tomatoes, remove the seeds, and dice.

After removing the oxtail from the pot, stir in the onion, carrot, garlic and 4 bay leaves. Fry on low heat for 15 minutes, until the vegetables are soft and caramelised. Add the tomatoes and fry for 5 minutes. Stir in 750 ml fino sherry, scrape the bottom of the pot with a spatula. Add the oxtail, and 1 tsp black peppercorns and 4 cloves. Add enough water to submerse the meat. Bring to the boil, lower the heat, and simmer softly for 3-4 hours.

Remove the meat from the pot. Increase the heat to reduce the sauce. Peel the flesh away from the bones, discard the bones. Transfer the meat to the pan, and wait until the sauce has the right consistency. Sprinkle over some fresh parseley. I served it with spaghetti and another time with fried potatoes and parsnips.
