Varkenshaas met mosterdsaus



Edwin had zin in varkenshaasje in een lekker sausje. Dat was zijn antwoord op mijn gepieker over wat te koken vanavond. Ok, een lekker sausje...en toen zag ik in Good Food Magazine van maart 2004 een recept van varkensvlees met mosterdsaus. Dat klinkt wel als een lekker sausje, vind je ook niet?



Ingredienten
voor 2 personen
1 varkenshaasje van ca. 250 g
1 grote ui
100 g champignons
2 teentjes knoflook
2 el grove mosterd
scheut droge sherry
100 ml crème fraîche
10 g gedroogde pasta, ik heb penne gebruikt


Bereiding
Snijd de varkenshaas in de lengte in tweëen. Wrijf in met wat mosterd en laat even liggen. Snipper ondertussen de ui, snijd de champignons in plakjes en hak de knoflook fijn. Verhit een eetlepel boter en wat olie in een pan, die groot genoeg is om de varkenshaas te bevatten. Bak de varkenshaas 7 minuten aan één kant. Keer om en voeg dan de ui, champignons en knoflook toe. Bak wederom 7 minuten en schep het uitmengsel af en toe om. Kook ondertussen de pasta volgens de aanwijzingen op de verpakking. Haal de varkenshaas uit de pan. Voeg crème fraîche en mosterd toe en roer. Voeg ook de sherry toe en breng op smaak met zout en peper. Leg de varkenshaasjes op de borden, verdeel de saus erover. Serveer met de pasta. Gestoomde sugar snaps zijn er lekker bij.

Creamy mustard pork

I was pondering about what to eat this evening. Edwin was aware of that and suggested pork tenderloin with a nice sauce. Well, a nice sauce....and then I saw this recipe from Good Food Magazine March 2004. It was called Creamy mustard pork. That's sound like a nice sauce, doesn't it? The sherry is a touch of myself.

Ingredients
serves 2
1 pork tenderloin weight approx. 250 grams
100 g mushrooms
1 large onion
2 tbsp wholegrain mustard
2 cloves of garlic
100 ml crème fraîche
splash of dry sherry
100 g dried pasta, I used penne

Method
Cut the pork tenderloin lengthwise in two pieces. Rub in some of the mustard en let rest while you prepare the rest of the ingredients: slice the mushrooms and chop the onion and garlic finely.
Heat some butter and oil in a pan large enough to contain the tenderloin pieces. Fry for 7 minutes. Turn the meat around and add the onions, mushrooms and garlic. Fry for another 7 minutes, stirring the onion-mix so now-and-then.
In the meantime, cook the pasta according to package instructions.
Get the tenderloin out of the pan and set aside. Stir in the crème fraîche and mustard. When the crème fraîche gets runny, add the sherry. Season to taste and warm through. Put the tenderloin pieces on the plates, spoon over the sauce. Serve with the pasta. This is good with steamed sugar snaps.
