Gehakt met spinazie en kokosmelk



Wel wat veel werk voor een doordeweeks gerecht, maar het resultaat mag er wel zijn. Dit is het eerste gerecht dat ik maak uit dit boek. Sommige ingrediƫnten zijn misschien wat lastig aan te komen in Nederland. Zoals de kerrieblaadjes. Daar heb ik lang naar moeten zoeken. Tot ik ze een keer tegenkwam in een toko in Den Haag, ingevroren. Ik heb ze thuis ook in de vriezer gelegd, en nu heb ik een klein voorraadje. Ook de zwarte kardemom hebben ze niet in elke toko. Ik vond ze in Apeldoorn, bij toko Asia. De zwarte peulen zijn ca. 4 Ơ 5 keer groter dan de groene. Er komt een gerookte geur van af, heerlijk om aan te ruiken alleen al.
Achteraf had er nog wel wat spinazie doorheen gekund, want het slinkt behoorlijk. De volgende keer doe ik er twee keer zoveel in.

It’s a lot of work for a weekday dish, but the result is worth it. This is the first recipe I cook from this book. Some of the ingredients are hard to come by in the Netherlands. The curry leaves, for instance. I had to search long for those. Finally I found them in a toko (Asian food store) in The Hague, frozen. At home I placed them in the freezer, and now I have some available. The black cardamom pods are not easy to find. I found mine in a toko in Apeldoorn, Toko Asia. The black pods are 4-5 times the size of the green ones. They have a smokey smell. Sometimes I just sniff at them.
In hindsight I could have added some more spinach, because it deminishes a lot when wilted. Next time I’ll add twice the amount.

Soto Daging



Ik had weer eens zin in iets aziatisch en een soep. En toen zag ik dit recept op de blog van Cooking Tackle. Ik heb het iets aangepast, maar niet veel. En ik vond het heel lekker. Ik heb wat rijst toegevoegd om er een meer gevulde soep van te maken.

I thought it was time for an asian dish, and I craved soup. And while browsing on the internet I saw this recipe on Cooking Tackle's blog. I adjusted it a little, by adding some rice to make it a more filling soup. It was very good.

Marokkaanse kip met abrikozen



Dit is een erg lekker gerecht. Kruidig, maar niet heet. Zoet van de abrikozen en uien. Echt erg lekker. Ik heb het geserveerd met couscous en een sperziebonensalade (gemengd met sjalotje, peterselie en citroenrasp).
Wanneer je de kip inwrijft met het specerijenmengsel, raad ik je aan dit niet met je blote vingers te doen. Er zit kurkuma in, en dan loop je een paar dagen met gele vingers rond. Gebruik plastic handschoentjes of een kwastje.

Moroccan chicken with apricots

Very good, this dish. Spicy, but not spicy hot. Sweet from the apricots and onion. Really nice.
When rubbing the chicken with the spice mix, I advise against doing it with your bare fingers. The mix contains turmeric, and you would have yellow fingers for a few days. Instead, use gloves or a brush.

Kip met kruidenkorst en pompoensaus



Weer eens wat ander te doen met pompoen. Het was erg lekker. De citroen gaf een frisse smaak aan de saus. Voeg wel voldoende zout toe (proef!) om de smaken goed te doen uitkomen in de saus.
Ik heb de kip besmeerd met een peterseliemengsel, maar je kunt het ook onder de huid stoppen.
Ik heb een vrij brede, lage braadpan (van Jamie Oliver) die goed geschikt is voor dit soort gerechten. De pan kan van het vuur zo de oven in, en weer terug op het vuur. Dus geen gedoe met overscheppen in een ovenschaal. Dat scheelt weer afwas.

Chicken with herb crust and butternut squash sauce

Yet a different recipe with butternut squash. I liked it. The lemon gave a nice freshness to the sauce. Do add enough salt to the sauce to elevate the taste.
I brushed the chicken with the herb paste, but you could put the paste under the skin, that would also be very nice.
I have a wide, shallow cast-iron pot (from Jamie Oliver), which is well suited for this kind of dishes. The pot can be placed from the hob into the oven and back again. You don't need an extra oven dish. That saves you on washing up!

Ovenschotel met gnocci, gerookte paprika en gorgonzola



Dit is een gerecht uit een Duitstalig kooktijdschrift, dat ik gekocht heb in mijn vakantie in Oostenrijk. De combinatie van smaken trok me aan, en ik had ook wel weer eens zin om zelf gnocci te maken. Hier heb ik al eens beschreven hoe ik gnocci maak. Het was een lekker gerecht, voor herhaling vatbaar.

Stifatho



Dit gerecht is eigenlijk gewoon een runderstoofschotel met wijn, net zoiets als boeuf bourgignon. Maar de specerijen geven dit gerecht toch een zo andere smaak, dat het in niets op boeuf bourgignon lijkt. Ik vond het erg lekker en zal het zeker vaker maken. Schrik niet van het grote aantal sjalotjes. Ze worden heel zacht en zoet.

This dish is like a beef stew in red wine, a bit like boeuf bourgignon. But because of the spices this dish tastes very different. It's not like boeuf bourgignon at all. I really like this one, and will certainly make it again.
Dpn't be put back by the large amount of shalots. They become really soft and sweet-tasting.

Dal met rabarber



Dit is een recept dat ik tegenkwam op internet. Omdat ik een enigszins zure smaak in het eten wel lekker vind, en ik ook erg van dal hou, vond ik het de moeite waard om het eens te proberen. En het was inderdaad heel erg lekker. Dat zure past er goed in, maar je kunt het ook heel goed weglaten. Het wordt een dikke brij, het ziet er niet uit, de kleur is lichtbruin. Maar de smaak is subliem. Bestrooid met koriander ziet het er nog een beetje kleurig uit. En dan te bedenken dat ik vroeger niet van linzen hield. Zo zie je maar weer: je smaak kan veranderen. Probeer af en toe eens iets waarvan je denkt dat je het niet lekker vindt. Ik doe dat af en toe, en soms word ik aangenaam verrast. En soms niet, dan weet je dat je het nog steeds niet lekker vind. Zorg dat je iets achter de hand hebt om te eten, wel zo handig.

Rabarber heeft, net als bleekselderij, van die draden in de lengte van de steel lopen. Zet je mes aan een kant schuin op de rand van de stengel, en trek naar beneden. Zo trek je de draden ervan af.

Dal with rhubarb

I found this recipe on the internet. Because I like a little bit of sour flavour in my food, and also because I love dal, I decided to give it a go. And it was indeed very good. The sour flavour went very well with the other ingredients, but if you don’t like it, leave the rhubarb out. Its a gloopy mess on your plate, the colour is brownish, so it doesn’t look very good, but the flavour is superb. The cilantro leaves sprinkled on top give it a little bit of colour. I didn’t follow the recipe exactly. I fried the shalots and spices, and added them to the end, like tempering as the Indians do. I ground the spice instead of putting them in whole.

And imagine I used to dislike lentils! So you see: your taste changes. Sometimes I try to eat something I think I don’t like. Sometimes I am pleasantly surprised. And sometimes I’m not. So if you do this, take care to have something else to eat, just in case.

Rhubarb has strings along the stems, just like green celery stalks. You can easily remove them by setting your knife at one end on the edge of the stem and pull it down.
