Kip in mandarijnensaus met vermouth



Ik denk dat dit recept uit het Nederlands kooktijdschrift Tip Culinair komt. Het is in ieder geval behoorlijk oud, maar ik maak het nog steeds af en toe. De combinatie van ingredienten is ongebruikelijk, maar erg lekker. De combi mandarijnen-vermouth doet het hem, en ook het spek kan niet zomaar weggelaten worden. Voor 4 personen.



Ingredienten
4 kippedijen
2 grote mandarijnen
50 g ontbijtspek (ik heb Duits spek gebruikt)
50-75 ml vermouth
1 el tomatenketchup
1 el gembersiroop
250 ml kippebouillon
50 ml slagroom
2 teentjes knoflook

Bereiding
Bak de kippedijen in een gietijzeren braadpan. Laat ze op laag vuur gaar worden, tot het vlees van de botjes valt. Dit kan 1 tot 1½ uur duren. Wanneer je kipfilet gebruikt, is dit laatste niet nodig. Dan is 10-15 minuten genoeg.
Snijd de ontbijtspek in blokjes.
Verdeel de mandarijntjes in partjes.
Hak de knoflook fijn.
Haal de kip uit de pan en bak de ontbijtspek tot knapperig. Haal ook uit de pan.
Voeg bouillon en vermouth toe en laat tot de helft inkoken.
Voeg gembersiroop, tomatenketchup en knoflook toe. Roer door elkaar en bak kort tot de knoflook gaar is.
Roer de room erdoor.
Voeg de kip en mandarijntjes toe en laat goed doorwarmen.
Serveer met witte rijst.

Chicken in mandarinsauce and vermouth

I have known this recipe for years, and every now and then I make it when I feel like it. The combination of ingredients is unusual, but very delicious. The combination of mandarins and vermouth does it, and don't leave the bacon out.
I think the recipe originates from a Dutch cooking magazine, Tip Culinair, but I am not sure. It's that old.

Ingredients
Serves 4 people
4 chicken thighs (or chicken breasts)
50 g bacon
2 large mandarins
50-75 ml vermouth, like Martini Bianco
a cup (250 ml) chicken stock
1 tbsp ginger sirup
1 tbsp tomato ketchup
2 cloves of garlic
50 ml double cream
white rice, to serve

Method
Heat some butter in a cast-iron pan or Dutch oven. Fry the chicken thighs until browned on both sides, a few minutes. Lower the heat, cover and and let cook until the meat falls from the bones. This may take 1-1½ hours.
(This recipe would also work well with chicken breasts.In that case it's not necessary to cook it for 1½ hours. 10-15 minutes will be enough.)
Chop the bacon in little pieces. Peel the mandarins and divide in pieces.
Get the chicken out of the pan and put aside on a plate. Add the bacon and fry until crisp. Get it out of the pan too.
Add the chicken stock and vermouth. Reduce to half.
Add the chopped garlic, ginger sirup, tomato ketchup and the cream. Add the chicken pieces and mandarin pieces. Increase the heat and let completely warm through.
Serve the chicken pieces with the sauce spooned over, and the rice.
