Aardappelbrood



Dit is het tweede broodje uit het aardappelexperiment. De andere is met zoete aardappel. De ingredienten zijn nagenoeg hetzelfde, behalve dan de aardappelsoort en lijnzaadjes.



Ingredienten
300 g bloem
50 g volkoren tarwemeel
200 g aardappel
2 el lijnzaadjes
1 tl instant gist
1½ tl zout
200 ml water

Bereiding
Kook de aardappel en pureer (bijv. met een pureeknijper).
Meng de bloem, tarwemeel, lijnzaadjes, instant gist en zout. Kneed de aardappelpuree erdoor. Voeg zoveel water tot een licht vochtig deeg ontstaat. Laat 15 minuten rusten.
Kneed 5-10 minuten tot een soepel deeg. Laat afgedekt één uur rijzen op een warme plaats, of tot het in volume verdubbeld is.

Bekleed een bakvorm met bakpapier. Sla de lucht uit het deeg, kneed het nog even kort door. Rol het op en leg het in de bakvorm. Dek af met ingevet plastic folie.

Laat nogmaals rijzen tot het in volume verdubbeld is, iets minder dan een uur.
Verwarm de oven voor op 220°C.

Snijd het deeg in met een scherp mes. Spuit het nat met een plantenspuit. Zet in de oven en spuit in de eerste vijf minuten nogmaals 3 keer nat met de plantenspuit. Zet dan de temperatuur wat lager en bak nog 30 minuten.

Klop op de onderkant om te controleren of het gaar is. Als het hol klinkt is het gaar. Laat afkoelen op een draadrek.

Dit brood was nog wat losser van structuur dan het zoete-aardappelbrood. Lekker, maar lastig te snijden.



Potato bread

This recipe is the second one in the potato experiment. The ingredients are almost the same as the sweet potato bread, except for the kind of potato and lineseeds.



Ingredients
300 g bread flour
50 g whole wheat flour
200 g potato
2 tbsp linseeds (aka flaxseeds)
1 tsp instant yeast
1½ tsp salt
200 ml water

Method
Cook the potato in boiling water and puree.

Mix the flour, whole wheat flour, instant yeast and salt. Knead in the potato mash. Add enough water to create a dough that is a little bit on the sticky side. Let rest for 15 minutes. Knead the dough until it feels supple, about 5-10 minutes.
Let rise until it has doubled in volume, about 1 hour.

Knock it down and kneed shortly to get the large air bubbles out.
Line a baking tin with baking paper. Form the dough in the right format en put in the baking tin. Cover with oiled cling film and let rise until doubled in volume. A little shorter than 1 hour.

Preheat the oven to 220°C. slash the dough with a sharp knife. Wet it with a plant spray and put in the oven. In the first 5 minutes of baking, spray again three times. Lower the temperature to 200 °C and bake another 30 minutes.

Check if it's ready by knocking on the bottom of the bread. Does it sound hollow? Then its ready. Let cool on a wire rack.

The structure of the crumb was soft and a little more loose than the sweet potato variety. That makes it difficult to slice. The taste was good, however.

    Je mag deze ook gerust inzenden hoor, the more the merrier! (Vandaag is daar overigens wel de laatste dag voor!)
