Kippensoep met rijst en spinazie



In het boekje Snelle gerechten zag ik een receptje voor kippensoep met spinazie. Het leek me lekker en vandaag heb ik het gemaakt. Het was inderdaad lekker. De komijn gaf het net iets extra's.



Snijd een prei in halve ringetjes en bak het 8-10 minuten zachtjes in wat olie in de pan waarin je de soep maakt. Ondertussen snijd je 200 g kipfilet in kleine blokjes.
Voeg 2 teentjes knoflook toe, geperst of fijngehakt, en 1 tl komijnpoeder. Bak een minuutje mee.
Voeg 1¼ liter kippenbouillon toe en breng aan de kook.
Wanneer de soep kookt, voeg je de kip toe. Roer goed, om te voorkomen dat de kipstukjes aan elkaar blijven plakken.
Voeg 125 g kortkorrelige rijst toe. (Het recept vroeg om 200 gram, maar ik had nog een aangebroken pakje arboriorijst staan, waar niet meer dan 125 gram in zat. Die hoeveelheid bleek prima te zijn.)
Laat 12 minuten zachtjes koken tot de kip en rijst gaar zijn.
Maak ondertussen de spinazie schoon en snijd in grove stukken. Voeg de spinazie na de 12 minuten kooktijd toe en wacht tot het zacjt wordt. Kook het ca. 3 minuten mee.
Voeg 1 tl gedroogde dille (of 1 el verse) en 1 el citroensap toe. Breng op smaak met zout.

Lekker met stokbrood en kruidenboter.

Chickensoup with spinach and rice

In a little cookbook about "quick recipes" I found this soup recipe. (The book is in Dutch and I don't know if it's available in the English language.) I made it today and it was a nice soup. The cumin gave it just that little extra.

Chop 1 leek in small half rings and fry softly in a little oil for 8-10 minutes. In the meantime, cube 200 g (0,45 lbs) chicken breast.
Add 2 gloves of garlic, crushed or chopped finely, and 1 tsp ground cumin. Stir and fry for 1 minute.
Add 1¼ liter (2.6 pint) chicken stock and bring to the boil.
Add the chicken cubes and stir to keep them from sticking to each other.
Add 125 g (0,27 lbs) shortgrain rice. The recipe called for 200 grams (0,45 lbs), but I had an opened package of arborio rice which contained only 125 grams. That amount turned out well.
Cook softly for 12 minutes until the rice is done.
In the meantime, clean the spinach leaves and chop coarsely. Add the spinach after the 12 minutes cooking time, and wait until it wilts. Cook softly for 3 minutes.
Add 1 tsp dried or 1 tbsp fresh dill. Add 1 tbsp lemon juice. Season to taste with sea salt.

I served it with baguette and herb butter.
