Risotto met prei en citroen



Nog een recept van de vakantie, dit keer Italië: risotto. Ik heb pakken risottorijst gekocht in Italië. De pakken die je hier doorgaans vindt, bevatten Arborio. Ik wilde eens wat anders en heb Carnaroli en Vialone Nano gekocht. Dit recept gebruikt Carnaroli, maar het werkt natuurlijk ook met Arborio. Het is een heerlijk zomergerecht, helemaal niet zwaar en machtig, omdat er geen kaas of room in zit. Het is lekker fris door de citroen.



Snijd 2 preien in halve ringetjes en bak ze afgedekt op laag tot middelhoog vuur tot ze zacht zijn, dit duurt tussen de 5 en 10 minuten. Ze mogen niet bruin worden.

Ondertussen heb je even tijd om de rest van de ingrediënten voor te bereiden. Hak 1 ui en 1 teen knoflook fijn. Snijd de helft van de schil van 1 citroen en snijd deze in ragfijne reepjes (of rasp de helft van de citroen met een fijne rasp). Hak een paar takjes peterselie fijn. Breng 1,2 liter bouillon aan de kook.

Wanneer de prei gaar is, haal ze uit de pan en houd apart. Verhit nog wat olie in de pan en fruit de ui en knoflook. Voeg 120 g risottrijst toe, ik heb carnaroli gebruikt. Roer goed zodat elke korrel met wat olie is bedekt. Voeg een flinke scheut witte wijn toe, roer, en wacht tot deze bijna helemaal verdampt is. Voeg dan 1 soeplepel bouillon toe, roer, en wacht tot deze bijna helemaal verdampt is. Roer af en toe met een houten pollepel. Herhaal dit tot de rijst gaar is, dit duurt ongeveer 20 minuten.

Voeg dan de prei weer toe, de helft van de fijngehakte peterselie, de citroenschilsliertjes en 1-2 eetlepels citroensap. Breng op smaak met zout. Dien op met de rest van de peterselie eroverheen gestrooid en wat fijngeraspte parmezaanse kaas.

Ik heb er gebakken zalm bij gegeten.



Risotto with leeks and lemon

Another recipe from the holidays, this time from Italy: risotto. Ik bought several packages of rice for risotto in Italy. The rice for risotto available in Dutch supermarkets is usually arborio. I sometimes want to try something different, so I bought different types in Italy: carnaroli and vialone nano. In this recipe I used carnaroli. It's a lovely recipe, it's not heavily loaded with cream and cheese. It tastes fresh because of the lemon. A nice recipe for the summer.

Slice 2 leeks in thin rings. Cook them covered on low to middle high heat until soft, approx. 5-10 minutes. Do not let them get brown.

In the meantime you can prepare the rest of the ingredients. Chop 1 onion and 1 clove of garlic. Peel 1 lemon thinly and slice the peel in very thin strips (or grate the peel from the lemon). Chop a few sprigs of parsley finely. Bring 1,2 litre (2,5 pints) chicken stock to the boil.

When the leeks are soft remove them from the pan and keep apart. Heat a little bit of extra oil and fry the onions and garlic softly. Add 120 g rice for risotto (I used carnaroli, but feel free to substitute with arborio or a different kind of short-grain rice) and stir to coat the rice with oil. Add 1 glug of white wine, stir, and cook until the wine has almost disappeared. Then start adding the stock, a ladle at a time. Stir, and cook until the liquid has almost disappeared. Then add the next ladle. Stir often. Repeat until the rice is done, this will take approx. 20 minutes.

Then put the leeks back in, half of the chopped parsley, the lemon peel, and 1-2 tbsp lemon juice. Stir and cook for another minute. Season to taste with salt. Serve with the other half of the parsley sprinkled over and some grated parmesan.

I had salmon with it.
